As a rule I’m not a fan of sweet and sour, so I prepared this dish with a wrinkled nose and doubtful mind.
Ingredients
500 g stewing beef
1 onion, chopped
1 green pepper, chopped
2 cloves garlic, chopped
1 tbsp dried parsley
vegetables of your choice
For the sauce
2 tbsp honey
2 tbsp lemon juice
2 tsp mustard
4 tbsp tomato ketchup
500 ml water
Method
Preheat the oven to 170 degrees.
Fry off the beef in a little oil until sealed then put in an ovenproof casserole. In the pan used for frying the beef do the same with the onion, pepper and garlic. Leave the garlic to the final couple of minutes so that it doesn’t burn. Prepare your vegetables and put the whole lot into the casserole with the beef.
Prepare the sauce by stirring the ingredients into the water, stir well until combined and then pour over the casserole contents. Stir in the parsley and season with salt and pepper.
Place in the oven for a couple of hours stirring occasionally. Turn the oven down to 150 degrees and continue to cook until the meat is tender.
I added new potatoes to my casserole and so it is a complete meal in itself.
